3 chicken breasts
1Cupbasil pesto
4Tablespooncream cheese
1Tablespoonfeta cheese
1Teaspoonthyme
1Teaspoonlemon juice
1Ounceegg (beaten)
2Cupbread crumbs
1Ounceflour
Instructions

Cut a pocket in the thick part of the chicken breast with a small serrated knife. 

Mix pesto, cream cheese, feta, thyme and lemon juice.  With a spoon, stuff the pocket cut in the chicken with the pesto mixture.  Dredge the chicken in flour, then egg and bread crumbs.  Place in baking dish. Bake at 350 for 40 minutes or until juices run clear. 

Notes

Stuffed chicken breasts are best served with garlic & olive oil cous cous, and a green salad.
