Ingredients
6 chicken thighs (boneless, skinless)
2Tablespoonpeanut oil
1⁄2Cupwhite vinegar
1⁄3Cuptamari sauce (soy sauce also works)
1⁄2Cuphoney
1Tablespoonginger (grated)
8Clovegarlic (or more if desired)
Instructions

Heat the oil in a skillet.  Add cut up pieces of chicken and brown for 5 to 10 minutes.

Pour the sauce over the chicken, cover & simmer for about 15 minutes.  Uncover and cook a few minutes longer until the sauce has thickened. 

Serve with rice.

Vegetable Variation:  In a separate pan, slowly saute a chopped onion, chunks of carrot, celery, mushrooms or any vegetable until just softened.  Add the vegetables to the pan with the chicken before you pour the sauce over it.  Continue to cook as above.

Substitute for 1 Tablespoon of fresh ginger with 1/2 teaspoon dried ginger.
